Baked Apples!

It’s apple season and I am rejoicing! I eat apples all year round, but this time of year I love the excitement of picking them myself and eating a fresh apple right from the orchard! And when I say eat them, I mean bake them into a warm, gooey, homemade apple pie with a side of vanilla bean ice cream! A girl has gotta splurge once in a while. Well, this was my master plan until I met the baked apple…

Let me set the scene: full buffet with desserts from shoo fly pie to pecan pie. I needed something to satisfy my sweet tooth, but didn’t want to over indulge. That’s when I spotted them… baked apples, right out of the oven with a little whipped cream on the side. My first bite was so YUM! The warm apple dissolved in my mouth and the whipped cream brought out the subtle hints of cinnamon and sugar. I must say it was one of the best desserts I’ve ever had. It definitely gets extra points for being the healthy choice, too!

Here’s the recipe! Enjoy!

Ingredients:

  • 6 apples, whole, peeled and cored
  • 1 tbs. cinnamon mixed with 1 cup of sugar

Directions:
Roll apples in cinnamon and sugar mixture. Place apples into baking dish. Sprinkle any remaining cinnamon sugar over the apples. Bake at 350 degrees for 30-40 minutes.
Optional: Serve with whipped cream or vanilla ice cream
