North Pole Ice Cream Cupcakes

Ice cream cupcakes recipe with free printable Christmas and North Pole cupcake toppers

Looking to make something special that will wow the kids at the next holiday happening? Look no further. I was recently assigned dessert duty for my family’s annual ornament exchange. Every year my cousins and I get together for our kids to exchange ornaments with each other in lieu of gifts. It’s a great tradition that I highly recommend, but I digress. Back to dessert!

Always up for a new go-to recipe to impress, I headed to Pinterest and came across ice cream cupcakes! After consulting with our in-house baker and creative extraordinaire Sammi, we made these little gems… North Pole Cupcakes complete with coconut snow and printable toppers!

Here’s what you need:

  • Cupcake Mix
  • Ice Cream (any flavor)
  • Vanilla Icing
  • Coconut
  • How to make:
    1. Make the cupcakes according to the directions on the box.
    2. Fill the cupcake wrappers half way with mix leaving room for the ice cream (added later).
    3. Bake the cupcakes and cool completely
    4. Top each cupcake with ice cream and freeze
    5. Once frozen, frost with icing and sprinkle with coconut
    6. Print and cut our cupcake toppers and attach to a toothpick
    7. Create and enjoy a little piece of the North Pole!
